Beef & Bean Casserole
2 lbs beef stew
3 med onions
3 green peppers
2 med cloves garlic
1 tsp cayenne pepper
1 T "The Best Barbeque Sauce You'll Ever Taste"
1 tsp oregano
1/2 tsp pepper
1/2 tsp salt
2 can stewed tomatoes
1 T white vinegar
1 large can pinto beans
Cut beef into 1/2" cubes. Heat oil in pot and brown beef cubes. Add chopped onions, chopped peppers and chopped garlic. Sauté, stirring to keep separate. Stir in cayenne, barbeque sauce, oregano and black pepper. Simmer 30 minutes. Add salt, pureed tomatoes and vinegar. Add water if too thick.
Cover and simmer for 1-1 1/2 hours or till meat is tender. Stir in beans and heat thoroughly.
