Beefy Eggplant Casserole

1 lg eggplant
1/2 cup olive oil
1 lb ground beef
2 T olive oil
1 large onion
1/4 cup parsley

1/2 cup green pepper
1 cup tomato sauce
1 T "The Best Barbeque Sauce You'll Ever Taste"
3 tsp oregano
1 tsp seasoned salt
1 cup ricotta cheese
1 egg
2 cups mozzarella cheese

Peel eggplant. Slice into 1/2" thick slices. Sauté in hot oil until lightly brown. Let dry on paper towels. Brown ground beef in 2 T olive oil. When almost cooked, add chopped onion, parsley, chopped green pepper, 1/2 cup tomato sauce, barbeque sauce, oregano and seasoned salt. Cook until beef is done and vegetables are beginning to soften. Mix ricotta with lightly beaten egg and 1/2 cup tomato sauce. Butter large casserole and layer 1/2 eggplant slices, 1/2 of beef mix, 1/2 ricotta mix and repeat ending with cheese. Bake uncovered at 350 degrees for 1 hour.
