Chicken Creole Recipe

2 chicken breasts
1/2 tsp salt
1/4 tsp pepper
1 T olive oil

Sauce:
3 T olive oil
1 cup chopped onion
1/2 cup celery
1/2 cup green pepper
2 cloves garlic
1 can peeled tomatoes
1 T "The Best Barbeque Sauce You'll Ever Taste"
1 1/2 tsp paprika
1/2 tsp salt
1 bay leaf
1 tsp cornstarch

Cut chicken into 1 inch pieces and toss with salt and pepper. Heat oil in skillet and add chicken. Cook over med-high heat for 5 minutes. Tossing frequently. Remove chicken and juices. In same skillet heat oil and add onion, sliced celery, diced green pepper and garlic. Sauté until vegetables are tender. Stir in barbeque sauce with tomatoes and their liquid. Break up with a spoon and stir in 1/2 cup water, paprika, salt, dash of cayenne pepper and bay leaf. Bring to a boil, then cover and simmer over low-med heat for 10 minutes. Stir in chicken and juices. Blend together cornstarch with 1 T water. Stir into chicken mixture. Uncover and simmer over low heat 10-15 minutes.
