Chicken Ratatouille Recipe8 chicken thighs
1/4 cup olive oil
2 small zucchini
1 small eggplant
1 large onion
1 med green pepper
1/2 lb mushrooms
1 large can diced tomatoes
1 T "The Best Barbeque Sauce You'll Ever Taste"
4 cloves garlic
1 T Italian herbs
4 cups rice
Heat oil in large skillet and cook chicken over med heat for 3 minutes. Add cubed eggplant, cubed zucchini, chopped onion, chopped green pepper, sliced mushrooms and minced garlic. Cook for 2 minutes then add tomatoes stirring carefully. Add Italian herbs salt and pepper to taste. Simmer uncovered for 10 minutes. Cook rice and spoon chicken and sauce over rice.
Make salad.
