El Paso Chicken Recipe8 chicken thighs
2 T olive oil
1 small onion
4 garlic cloves
1 can peeled tomatoes
1 T "The Best Barbeque Sauce You'll Ever Taste"
1/2 cup black olives
1 T red wine vinegar
Heat oil in skillet and add skinned chicken. Brown well and remove from pan. Add sliced onion and chopped garlic. Sauté until onion is soft about 6 minutes. Stir in tomatoes, barbeque sauce and liquid, then the remaining ingredients one at a time. Add chicken, cover and simmer for 45 minutes. Serve over white rice.
