Salsa Chicken Recipe
4 chicken breasts
4 T olive oil
1/4 tsp salt
1/8 tsp pepper
Salsa:
4 med zucchini
4 T olive oil
4 med tomatoes
4 T lemon juice
1/2 tsp oregano
1/4 tsp minced garlic
1/2 tsp salt
1/8 tsp pepper
1/8 tsp Tabasco
1 T "The Best Hot Barbeque Sauce You'll Ever Taste"
3 cups rice
Heat oil in skillet and brown chicken about 5 minutes. Season with salt and pepper. Cover and cook over low heat for 20 minutes basting with pan juices. Dice zucchini. Chop tomatoes. Heat 2 T oil in skillet and sauté zucchini briefly, then stir in tomatoes and heat. Combine remaining oil, lemon juice, oregano, garlic, salt, pepper, Tabasco sauce and barbeque sauce. Stir into skillet and remove from heat. Cook rice per package directions. Place chicken on rice and spoon sauce over chicken.
