Spaghetti En Brodo Recipe1 med red pepper
1 lg carrot1 stalk celery
1/4 lb fresh spinach
1 small onion
2 T olive oil
2 cans chicken broth
1 T "The Best Barbeque Sauce You'll Ever Taste"
1/2 tsp basil
1/4 tsp salt
1/4 tsp pepper
1 bay leaf
1 cup cooked chicken
1/2 lb spaghettiCut pepper, carrot and celery in 1" sticks. Slice spinach into thin strands. Sauté chopped onion in oil over medium heat until tender, about 5 minutes. Add broth, barbeque sauce, red pepper, carrot, celery, basil, salt, black pepper, bay leaf, chicken and 1 2/3 cups of water. Bring to a boil. Lower heat, cover and simmer 15 minutes. Add spaghetti, cover and simmer 8 to 10 minutes. Add spinach until wilted. Remove bay leaf. Serve immediately.
